If you go back to the dealer have them check the suspension and the allignment, but if you allow them to put factory tires back on, you are setting yourlself for faliure again. There are literally hundreds of posts on much better choice of tires for the LR3. Check them out and deside. The downward adjustment on the ride height sounds fairly common when turning it off. It's adjusting the height to no longer having the weight it was carrying. However not sure I have noticed mine adjusting upward everytime I start it. But again, I'm a fairly light weight. If you are a full size man then perhaps it is normal for you.
