I am replacing the stock suspension on my 1995 Disco 1 with the medium duty OME 2" lift kit and then I want to add some General Grabber AT2's on stock wheels.  I use this vehicle for on and off road and I was wondering what size tires would be recommended?  I dont want anything really big, but I want to fill up the wheels wells a little more than with stock size tires.  I was thinkin either 255//70/16 or 265/70/16. Also, with the bigger size will that change anything with regards to speedometer, odometer, etc?

Depends on how much extra you want to pay for gas. 265's will cost you a good 2 MPG in town, 1.5 MPG on the road along with a pretty big loss in low end power.
If you don't want to cut and trim, stay with a 245/ 75 or 70/ 16.
